Sugar Free Mint Chocolate Chip Ice Cream

I love ice cream but had to give it up when I learned that I couldn’t eat sugar. That is until I developed a recipe for sugar-free ice cream! This recipe can be tweaked for different flavors. I did mint chocolate chip because that’s my favorite. 😊

Sugar Free Mint Chocolate Chip Ice Cream
Smooth and creamy Mint Chocolate Chip Ice Cream that has no added sugar!Makes 1 quart
Servings: 8

Ingredients
- 1 1/2 cups Whole Milk
- 3/4 cups Xylitol Substitution: Use favorite granulated sweetener
- 1 1/2 cups Heavy Cream
- 1 teaspoon Vanilla Extract
- 2 tablespoons Creme de Menthe Liqueur Adjust to taste
- 1/4 teaspoon Salt
- 10 drops Green Food Coloring optional
- 1/2 teaspoon Guar Gum optional
- 1 1/2 cups Sugar Free Chocolate Chips Substitution: 1 cup of Mini Morsels
Instructions
- Combine xylitol and whole milk, stirring until completely dissolved. If needed, warm milk (but don't boil) to help dissolve xylitol.
- Combine remaining ingredients, except for the chocolate chips, stirring until thoroughly combined.
- Chill in refrigerator for 3-8 hours, covered.
- Place mixture in an ice cream maker, following the manufacturer's recommended operation. Add the chocolate chips in the last 5 minutes of churning.
- Transfer the ice cream to a freezer-safe container and freeze for 8-12 hours before serving.
