There’s something about toasting coconut or nuts that always had me cringing. The thing is, I just couldn’t seem to not overdo it and I ended up with burnt nuts every time. Now, I have a better method! Ok, so it’s really not the revolutionary, but it works!
Most directions tell you to toast the nuts for 5-10 minutes, or something along those lines. So what do you do? You put them in the oven and you wait 5 minutes before checking on them again. If they aren’t done, you stick them back in for another few minute before checking again. Next thing you know, BAM! overdone.
It can happen in an instant that they go from underdone to overdone. So, what’s the secret? Follow the steps below and never have burnt nuts again!
Preheat oven to 325 degrees F
Place coconut in an even lay on an ungreased cookie sheet.
Cook coconut in preheated oven for 3-5 minutes. Every 1-2 minutes, stir the coconut to ensure even browning. This also gives you a chance to check on the color of the coconut. Remove coconut from the oven when light browning occurs. Do not wait for all of the coconut to be an even shade or you will end up with burnt pieces!
I know what you’re thinking, checking on the coconut every minute is a little excessive, isn’t it? No! I have this terrible habit of walking away and forgetting to check on things unless there’s a timing going. I’ll set the microwave for a minute, but really only want it on for 15 seconds. Surely I can wait those 15 seconds and stop it, right? Next thing I know, I’m getting something out of the fridge, the kids need something, I start cleaning something, who knows. But before I know it 45 seconds has gone by and I swear at myself for doing it yet again!
Set your timer for 1 minute intervals. this is a good reminder to keep checking on it. Coconut goes from underdone to overdone very quickly. Checking it frequently will make sure it doesn’t get overdone.
