Have you ever had one of those desserts that you just simply can’t wait to dive into?  That’s what Sex in a Pan is!  Every layer makes your mouth water and as you add more and more layers the anticipation mounts. Have you ever seen a more decadent dessert that was both sugar free and gluten free?   This recipe is for 16 people with a 9×9 pan.  We do not have 16 people living in the house (few do!), so I decided to cut this recipe down to 4 servings.  The pictures will show a much smaller pan than the recipe…

A few days ago I made these amazing Orange Zest Scones for my 30 Day Challenge. They are so soft and delicious. But there’s one problem. And it’s a big one. They aren’t gluten free!  I kept watching my husband eat these amazing Orange Zest Scones day after day. Until I decided to make a gluten free variety. You guessed it. For Day 17 of my 30 Day Challenge, I made Gluten Free/Sugar Free Orange Zest Scones.   These are the best Scones I have ever had!!  Ok, so they are the only scones I have ever had. But I…

I did it!  I finally did it! I have made countless cupcakes and always came up short. I was beginning to think that it wasn’t possible to make a gluten free cake that was light and airy and moist. Sure, it’s easy to make a cake that’s dense or dry. I found plenty of ways to do that. But to make a cupcake that is so unbelievably light?  It’s like finding the pot of gold at the end of the rainbow.   This Ultimate Vanilla Cake recipe tastes like it was made from a box mix. If I didn’t tell you…

The day I figured out how to make sugar-free frosting I was elated. The problem I kept running into was that I couldn’t find a good sugar substitute for powdered sugar. Then, I learned how to make Italian Meringue Buttercream. IMBC uses granulated sugar, which opens the door to more sugar substitutes instead of only the powdered variety. I prefer IMBC even when I am baking a full sugar cake. It is easier to work with. It is so silky smooth that creating a smooth flawless cake is simple. Also, IMBC firms up in the fridge. Standard American Buttercream is…

For Day 10 of my 30 Day Challenge I’m being a bit selfish. You see, it’s my birthday tomorrow and I wanted to bake something good. I love cinnamon rolls. I really love the Pillsbury Grands cinnamon rolls, but have been without them for a couple years now. When I saw this recipe, I thought it would be perfect for my birthday breakfast!  Is it wrong to bake all my own food for my birthday?  I don’t think so. 😊   This recipe is a copy cat recipe of Cinnabon. Let’s face it, there’s nothing better than Cinnabon. They are…

Hands down, brownies are my favorite dessert. It’s funny because when I was a kid I didn’t like chocolate.  I even cried once when my hot fudge sundae turned out to have chocolate on top of my ice cream. Now that I have kids of my own, I find that they don’t like chocolate either. My theory is that kids’ taste buds are different (that part is a fact) and it makes the bitterness of chocolate stand out instead of the sweetness. Of course, every night my daughter asks for a piece of candy and half the time she picks…

My step dad has been trying to get me to make granola.  It seems that every time I go to visit him he is making granola and tries to share the recipe with me.  I always refused.  Until now.   Granola always sounded too time consuming to make.  I have two little kids and didn’t have time for something that I could buy instead of make.  But, this month I am taking a 30 Day Challenge (read about it here) and decided to try something new.  So, today is granola day!   It turned out that it is really easy…

I’m so excited by my bake for Day 6 of my 30 Day Challenge. In my college years, I used to bring home a box of frozen cream puffs from BJ’s (you know, the jumbo box) then I’d eat 1 or 2 each day. I didn’t even wait for them to thaw. I mean, who could?  Then I grew up and decided living off an IV of cream puffs was probably not a good thing to do. For my waist line at least.  Well, now it’s been far too many years and it’s time to revive the cream puff! I…

I am on Day 5 of my 30 Day Challenge.  It is Apple Pie day!  No, it isn’t March 14 (3/14, get it?), just a good day for pie!  Seems fitting to make the most American food on the day of the Super Bowl – the largest American sporting event. Why did I decide to make Apple Pie?  Well, I have made a total of 1 pie before this one.  And it was bad…  All the liquid that bubbled out and landed on the stove bottom scarred me for life.  But I think it’s time to face my fears and…

For Day 4 of my 30 Day Challenge, we’re making gluten free cornbread. On Day 2 I made these amazing Blueberry Muffins. While they were baking, my daughter tells me they smell so good and she wanted one. When they came out of the oven (and cooled of course), she came over to get her muffin. She turned to me and started crying. “I thought they were corn muffins” she tells me. To my relief, I already had the ingredients for these corn muffins and could tell her we could make some!  Another day of course, it was bedtime after…
